Groats are the hulled whole kernels of cereal grains, such as millet, rice, barley, corn, oats and wheat, as well as other grain-like foods such as buckwheat, peas and lentils. Groats are rich in complex carbohydrates, which are an essential part of the diet. Groats make nutritious porridge, soup or pilaf. They can be used to make a quick breakfast or a healthy dinner of kasha, either by themselves, or mixed with other cereals. There are many types of groats available in Ukraine, most of them produced in the country, and they form a key part of the traditional Ukrainian diet. Naturally, the best choice is organic groats, which are readily available on the market.
