Eggs are whole foods

Although many people rely on store-bought eggs, the following guidelines should be kept in mind:

  • Eggs should always be bought fresh. At home, the easiest way to determine an egg’s freshness is to put it in water. If the egg sinks, it’s fresh. The longer eggs are stored, the lighter they become. Eggs that are not fresh will tend to float on the water.
  • To tell if an egg is good, hold it close to your ear and shake it. If you hear something moving inside the shell, it’s likely to be off.
  • The colour of an egg’s shell (e.g. brown or white) makes no difference to its nutritional value.
  • Eggs produced on poultry farms must be labelled.
